lemon cilantro hummus


ingredients:
2 cans of chickpeas drained & rinsed
1 handful of cilantro
1 garlic clove
2 lemons juiced & zested
1-2 tablespoons extra virgin olive oil 
1/4 -1/2 cup liquid {water, chicken or veggie broth, your choice} 
pinch of salt to taste 

in a food processor combine the beans, cilantro, lemon juice, zest & salt, blend until well combined. you'll need to add the liquid as the processor is mixing, just until you get your desired consistency. at the very end, while still mixing, add the olive oil until creamy.  
this is good straight out of the processor or chill for a few hours & up to a day to get the best flavor.

this hummus is meant to be very citrusy and fresh. its the best on a hot day with some chilled veggies. 
we're living off of this stuff this summer.

  6. I have been eyeing food processors for a while know nut was not sure I was ready to fork over a few hundred euros for one but this may have done it! That look so yummy and cilantro is my favorite!!!
